Starter: ”The Giddy Goat”
A delicious fresh salad of pear with goat cheese as a starter. A recipe for 2 people. Adjust the recipe according to the number of players.
- 2 slices of goat cheese
- 3 pears
- curly lettuce
- 2 sprigs of rosemary
- bag of walnuts
- olive oil
- balsamic vinegar
Cut the pear in four parts and remove the core. Take the rosemary leaves off the twigs and bake them together with the pear (with skin) for about 10 minutes in olive oil.
Make the dressing with 3 tablespoons of honey, 3 tablespoons of olive oil, 1 tablespoon of balsamic vinegar and juice of half a lime. Add black pepper to taste.
Meanwhile, roast the walnuts with goat cheese in a pan or grill them briefly in the oven. Wash the curly lettuce and put it on a plate. Place the baked pears with the goat cheese with walnuts on top of the lettuce. Garnish with the dressing.
And there you are: your “Giddy Goat salad”!
Main course: Not Quiche
Quiche of broccoli, cauliflower and feta. A healthy and delicious savory pie. Easy to make if you have many guests for the murder dinner.
- A small cauliflower (200 grams)
- Broccoli (200 grams)
- 150 Grams of Feta
- 3 eggs
- 125 grams of culinary cream
- 8 slices of quiche dough or butter puff pastry
- 40 grams of almond shavings
Let the slices of dough thaw. Grease a cake pan with butter and preheat the oven at 175 degrees. Cut the broccoli and cauliflower into florets and remove the stems. Boil a pan of water and add the broccoli and cauliflower. Boil for 3 minutes and drain.
Cover the greased cake pan with the dough or puff pastry. Dock a few small holes in the bottom with a fork. Divide the broccoli and cauliflower over the dough. Crumble some feta on top.
Beat the three eggs in a bowl and add the cream. Season with pepper, salt, Italian herbs and some nutmeg. Pour this mixture into the cakepan. Bake the quiche in the oven for about 20 minutes.
Remove the quiche from the oven after 20 minutes and sprinkle it with the almond shavings. Bake the quiche for another 15 minutes until it is golden brown. Prick the quiche to see if the egg mixture is not liquid anymore.
Dessert: ”Nuts about Nuts”
Nuts about Nuts is a light and not too sweet dessert. It is a fresh combination of cherries with the mild taste of walnuts.
- 2 eggs
- Powdered sugar
- A jar of cherries
- Kirsch (Cherry liquer)
Cut the cherries into thin slices and chop the walnuts. Split the egg and separate the yolk from the egg white. Stir the egg yolks with 2 tablespoons of powdered sugar. Beat the egg white stiff and mix it carefully with the egg yolk. Now add the thinly sliced cherries, the chopped walnuts and a tablespoon of kirsch.
Divide the mass over two glasses and let it stiffen in the fridge for 20 minutes. In the end you can add some whipped cream to the dessert.
