Starter: “Are you chicken?”
Chicken noodle soup for 2 people. You can adjust the ingredients to the number of players.
- 2 chicken fillets
- 1 red chili pepper
- 1 bag of shiitake
- 1 bag of noodles
- 1 bag of baby leaf spinach
- 2 cubes of chicken broth
- Soy sauce
- Sesame oil
Heat 1 liter of water and put 2 cubes of chicken broth in it. When the cubes have dissolved, add the two chicken fillets. Let the chicken fillets boil in the broth for about 12-15 minutes. Remove the chicken fillets from the pan and let it cool down.
Remove the hard stalks from the shiitake and cut them into quarters. Chop the chili pepper. Cut the chicken fillets (cooled down) into small cubes of approximately 1 cm.
Add soy sauce and sesame oil to the broth. Add the noodles and cook them for 3-4 minutes. Then add the shiitake and cook for another 2 minutes.
Finally, add the pieces of chicken and spinach. Cook the soup until the spinach has shrunk.
Main course: ”In a nutshell”
The main course consists of a pasta of zucchini and pistachio nuts. A simple dish that is sure to appeal to all ages.
- Whole-wheat pasta
- 2 to 3 zucchini (depending on the size)
- Red pepper
- A clove of garlic
- Salt pepper
- Olive oil / coconut oil
- Pistachio nuts
- Parmesan cheese
Put the whole wheat pasta in a pan and bring it to the boil. Heat the olive oil/coconut oil in a wok and add the finely chopped garlic and red pepper. Fry the garlic and pepper briefly. Tip! Remove the seeds from the red pepper if you want it less spicy!
Cut the zucchini lengthwise in quarters and then into cubes, then put them in the wok with the garlic and pepper. Stir carefully, add salt/pepper to taste. Sprinkle the ingredients with 2 tablespoons of oregano. Mix everything well and simmer over low heat.
When the zucchini is soft, you can either blend it into a sauce with a hand blender or leave the cubes as they are.
Put the pasta on a plate, cover the pasta with the zucchini and sprinkle it all with pistachio nuts and grated Parmesan cheese.
A criminally tasty dessert is the Banana split with vanilla ice cream and whipped cream. For this dish you need the following ingredients for 4 people.
- 50 grams of butter
- Liquid flower honey
- 50 grams of unsalted mixed nuts
- 4 ripe bananas
- 1/2 liter vanilla ice cream
- 2 tablespoons of whipped cream
Melt the 50 grams of butter in a pan. Add 3 tablespoons of flower honey. Chop the 50 grams of nuts and add it to the butter and honey mixture. Heat it all for 2 minutes.
Cut the 4 bananas lengthwise in half and place one half of each banana on each plate. Take the vanilla ice cream from the box with a warm spoon and place it on the banana. Then put the other half of the banana on top of it.
Finish the nut-honey sauce by adding 2 tablespoons of whipped cream. Pour the warm nut-honey sauce over the banana.
